Crispy Homemade Spring Rolls – A Flavorful Asian Delight

Spring rolls are one of the most loved Asian appetizers in the world, thanks to their irresistible crunch, savory filling, and ability to pair beautifully with almost any dipping sauce. Whether served as a side dish, party snack, or light meal, homemade Spring rolls deliver a freshness and flavor that store-bought versions simply cannot match. In this recipe, you will learn step-by-step how to prepare golden, crispy spring rolls stuffed with a delicious combination of vegetables, meat, and seasonings — all wrapped in a delicate sheet and fried to perfection.

Ingredients

For the Filling:

  • 200g ground chicken or pork

  • 1 medium carrot, grated

  • 1 small onion, finely chopped

  • 1 cup shredded cabbage

  • ½ cup glass noodles (soaked and chopped)

  • ½ cup mushrooms, finely diced

  • 1 clove garlic, minced

  • 1 tsp fresh ginger, minced

  • 1 tbsp soy sauce

  • 1 tbsp oyster sauce

  • ½ tsp black pepper

  • ½ tsp salt

  • 1 tbsp sesame oil

  • 1 tbsp vegetable oil for sautéing

For the Wrapping & Frying:

  • Spring rolld wrappers

  • 1 beaten egg for sealing

  • Vegetable oil for deep frying

For Serving:

  • Fresh lettuce leaves

  • Sweet chili dipping sauce

Instructions

1. Prepare the Filling

Start by heating one tablespoon of vegetable oil in a skillet over medium heat. Add the minced garlic and ginger, sautéing until fragrant. Add the chopped onion and cook until softened. Next, mix in the ground chicken or pork, breaking it apart as it browns. Once the meat is nearly cooked, add the grated carrot, shredded cabbage, mushrooms, and chopped glass noodles.

Season the mixture with soy sauce, oyster sauce, salt, pepper, and sesame oil. Stir well to ensure all ingredients are evenly coated. Allow the filling to cook for 3–5 minutes until the vegetables soften slightly but still retain some crunch. Remove from heat and let the mixture cool completely before wrapping.

2. Prepare the Wrappers

Place one spring roll wrapper on a flat surface in a diamond shape, with a corner facing you. Spoon about two tablespoons of the cooled filling near the bottom corner. Fold the corner over the filling, rolling tightly halfway. Fold in the two side corners toward the center to create a neat envelope. Continue rolling until you reach the top corner. Brush the corner lightly with beaten egg to seal. Repeat this process with the remaining wrappers and filling.

3. Fry the Spring Rolls

In a deep frying pan, heat oil over medium-high heat. To check if the oil is ready, drop a small piece of wrapper inside — if it sizzles and rises immediately, the temperature is perfect. Gently place the Spring rolls into the hot oil, making sure not to overcrowd the pan. Fry them in batches for 3–4 minutes or until golden brown and crispy on all sides.

Use a slotted spoon to transfer them to a plate lined with paper towels to drain excess oil. Proper draining keeps the rolls light, crisp, and irresistibly crunchy.

4. Serve & Enjoy

Arrange a few fresh lettuce leaves on a serving plate. Place the crispy Spring rolls on top, slice some in half if you want to reveal the mouthwatering filling, and serve with a bowl of sweet chili sauce. The combination of the crunchy exterior, savory filling, refreshing lettuce, and sweet-spicy dip creates a perfect balance of textures and flavors.

Tips for Perfect Spring rolls

Cool the filling completely before rolling to prevent tearing.

  • Roll tightly, but not too tight — leave enough space to avoid bursting during frying.

  • Use medium heat for frying; too high and the outside burns before the inside warms.

  • You can air-fry for a healthier alternative: 200°C (390°F) for 10–12 minutes, brushing lightly with oil.

  • Make ahead: Freeze uncooked spring rolls

  •  and fry whenever needed. They fry perfectly straight from the freezer.
