It is simple, elegant, and full of warm, deep flavor. The chicken is seasoned and seared for a gorgeous golden crust before being finished in the oven until perfectly moist. This recipe is ideal for a cozy dinner, a special occasion, or anytime you want to elevate a simple meal into something restaurant-worthy. Let’s get started.

Ingredients

For the Roast Chicken Breast

  • 1 large chicken breast, skin-on or skinless

  • 1 tbsp olive oil

  • 1 tbsp butter

  • Salt and black pepper

  • 1 tsp garlic powder

  • 1 tsp paprika

  • ½ tsp dried thyme or rosemary

For the Crispy Golden Potatoes

  • 4–5 small potatoes, peeled

  • 1 tbsp olive oil

  • 1 tbsp butter

  • Salt and pepper

  • ½ tsp rosemary or thyme

  • Optional: ½ tsp paprika

For the Broccolini

  • 1 bunch broccolini

  • 1 tbsp butter or olive oil

  • Salt and pepper

  • 1 garlic clove, minced

For the Creamy Mustard Pan Sauce

  • ½ cup chicken stock

  • ½ cup heavy cream or milk

  • 1 tbsp Dijon mustard

  • 1 tsp whole-grain mustard (optional for texture)

  • Salt and pepper

  • 1 tsp butter

Instructions

Step 1: Prepare the Potatoes

Start with the potatoes since they take the longest.
Bring a pot of salted water to a boil and parboil the potatoes for about 10 minutes until slightly tender but not fully cooked. Drain and let steam-dry for 3–5 minutes; this helps them crisp up.

Place the potatoes in a pan with olive oil and butter. Toss with salt, pepper, paprika, and rosemary. Roast in a preheated oven at 200°C (400°F) for 25–30 minutes, flipping halfway until golden and crispy on every side.

Step 2: Cook the Chicken Breast

Season the chicken with salt, pepper, paprika, garlic powder, and thyme. Heat a skillet over medium-high heat and add olive oil. Place the chicken breast top-side down and sear for 3–4 minutes until beautifully golden.

Flip the chicken, add butter, and spoon the melted butter over the chicken as it cooks (basting). Once the underside is golden, transfer the chicken to the oven (same temperature as potatoes) for 12–15 minutes depending on thickness.
When done, let it rest for 5 minutes before slicing — this keeps it juicy.

Step 3: Sauté the Broccolini

In the same skillet used earlier, add butter or oil. Toss in broccolini and sauté for 3–5 minutes until bright green and slightly tender. Add garlic during the last minute of cooking. Season with salt and pepper.

Step 4: Make the Mustard Pan Sauce

Using the chicken drippings left in the pan, add chicken stock and stir to deglaze, scraping up all the flavorful brown bits. Add cream and mustard, stirring until smooth.

Simmer on low for 3–5 minutes until slightly thickened. Taste and adjust salt, pepper, or mustard as needed. Finish with a knob of butter for extra silkiness.

Step 5: Assemble the Plate

Slice the chicken breast into even pieces. Arrange it neatly on the plate beside a generous serving of crispy golden potatoes. Add the sautéed broccolini, allowing the vibrant green to contrast against the warm tones of the chicken and potatoes.

Drizzle the mustard sauce around the chicken or underneath it — just like a restaurant presentation. Add freshly cracked pepper on top for the perfect finishing touch.

Final Thought

This dish is the perfect example of how simple, everyday ingredients can become something extraordinary when treated with attention and technique. The chicken remains tender and juicy thanks to proper searing and resting. The potatoes are wonderfully crisp, offering the ideal contrast to the velvety mustard sauce. And the broccolini provides freshness and color, completing the harmony of the plate. Whether cooking for yourself or serving guests, this meal delivers comfort, elegance, and satisfaction in every bite.

Bon appétit! 🍽️✨
