Instructions
1. Prepare the Kofta
In a large bowl, combine the ground meat, grated onion, parsley, spices, and salt. Knead the mixture well until sticky — this helps the kofta hold its shape. Divide the mix into long, even portions and mold them around skewers, pressing firmly to create a consistent thickness. Place the formed kofta in the fridge for 20–30 minutes to firm up.
2. Marinate the Chicken
In another bowl, mix yogurt, lemon juice, tomato paste, olive oil, garlic, and all spices. Add the chicken pieces and coat thoroughly. Cover and refrigerate for at least 1 hour, ideally 3 hours for deeper flavor. When ready, thread the chicken onto skewers.
3. Prepare the Vegetables
Brush the tomatoes, onions, and chili peppers lightly with olive oil and a sprinkle of sumac or salt. These vegetables will grill beautifully and add sweetness and smokiness to the platter.
4. Grill Everything
Preheat your outdoor grill, grill pan, or oven broiler to high heat.
-
Place the kofta skewers on the grill and cook for 4–5 minutes per side until browned and juicy.
-
Cook the chicken skewers until golden and cooked through, around 12–15 minutes depending on size.
-
Grill the vegetables until slightly charred and soft.
For extra flavor, you can brush the kofta and chicken with a bit of butter or ghee during grilling.
5. Warm the Bread
Place your flatbread briefly on the grill or in the oven for a few seconds. This helps it absorb the juices from the meats and adds authenticity to the dish.
6. Assemble the Platter
On a large serving plate:
-
Lay a piece of flatbread at the bottom.
-
Arrange the kofta and chicken side by side.
-
Add the grilled tomatoes, onions, and chili pepper.
-
Top with fresh parsley and sliced red peppers as garnish.
-
Add lemon wedges for squeezing.
-
Serve with hummus, yogurt sauce, and pickles just like in the photo.
You can drizzle a bit of olive oil over the vegetables or sprinkle sumac on top for color.
